The full name is Hazard Analysis Critical Control Point stands means a management system in which food safety is addressed through the analysis and control of biological, chemical, and physical hazards.
HACCP is an important control point for identifying hazards that may occur at each stage from raw materials of food to manufacturing, processing, preservation, distribution, and cooking until the final consumer takes it . It can be said to be a scientific hygiene management system to secure food safety through autonomous, systematic and efficient management.
